Guilt-Free Date Balls

Have a sweet tooth but struggling with a healthy conscience? These guilt-free Date Balls are the perfect snack and are so easy to make!

DATE BALL RECIPE

Ingredients:

500g pitted dates

100g goji berries

1 cup coconut sugar

2 tblsp water

1 tblsp coconut oil

1 tsp vanilla essence

1 cup rolled oats

1/4 cup coconut shreds and extra to taste

Method:

Roughly chop dates. Mix with goji berries, coconut oil, water & sugar in a large flat pan. Stir consistently on low to medium heat until a paste consistency (~10 minutes). Remove from heat and mix in vanilla essence. 

Let the mixture cool enough to handle and mix in coconut shreds & oats. Once combined roll into balls and coat in coconut shreds. 

Store in an air tight container in the fridge.
